Yummy Sausage and Potato Soup

Y’all. This soup was so delish! It was super easy with a little prep time!

First I chopped up some onions and carrots and sautéed them in 1 stick of butter in the pot I was going to cook the soup in.

Next I cooked a kielbasa sausage and one jimmy dean regular sausage in the skillet together.

Next I peeled and cut potatoes and added them in the pot. Then I added 1/4 cup flour to the pot and stirred. Then I added the cooked sausage and 1 1/2 boxes of chicken broth to the pot.

I boiled for 10 minutes then reduced heat to simmer for 30 minutes or until your veggies are ready to eat.

I added garlic salt, salt, pepper, paprika, and oregano to season my soup! We paired this soup with toasted garlic bread!

BBQ Crusted Pork Chops

BBQ Crusted Pork Chops

Ok this one is so yummy and easy! Get some boneless thin pork chops and you can easily whip this together for dinner!

Start by mixing together two different bbq sauces. I used Sauers Original and Sweet Baby Rays Hickory and Brown Sugar. I poured in enough of each that I could dip all of my pork chops in them! I also sprinkled a little of each of these seasonings into the mix: Old Bay, Paprika, Garlic Salt, Butt Rub, and Famous Dave’s rib rub.

Once that’s all mixed I dipped my pork chops in it and then dipped them in a bowl of Progresso bread crumbs. Make sure you’ve got them good and covered!

Next spread them out on your cookie sheet and bake for 20-30 minutes on 325 degrees. Then I broil them for 4 minutes!

I totally forgot to take a picture when they were done! Massive fail! But they were so tender and yummy! I paired them with baked beans and Cole slaw!

Yummy Chicken Parmesan

Yummy Chicken Parmesan

This is a super easy dinner option for the whole family! And it’s DELICIOUS!

Here’s what you need:

  • 1 lb chicken breasts
  • Italian dressing
  • oregano
  • garlic salt
  • pepper
  • chicago steak seasoning
  • 1 jar of marinara sauce
  • 1 cup shredded parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups bread crumbs
  • milk
  • 3 eggs
  • Cornbread mix
  • 1 box linguine noodles

Here’s what you do:

  • Heat oven to 400 degrees.
  • Season chicken with seasonings and soak in Italian dressing for 4 hours prior to cooking.
  • Crack 2 eggs into a bowl.
  • Mix shredded mozzarella and shredded parmesan cheese and bread crumbs in a bowl.
  • Dip chicken breasts in egg then dip in cheese and bread crumb mix.
  • Place chicken on a cookie sheet and bake in oven at 400 degrees for 15 minutes.
  • Make cornbread according to directions.
  • Boil water for noodles. Boil noodles according to package.
  • Take chicken out of oven and pour marinara sauce over chicken then top with the rest of the bag of shredded parmesan.
  • Broil in oven for 4-5 minutes. Remove chicken and ensure chicken is cooked to 165 degrees with a food thermometer.
  • Put noodles on plate and top with chicken. Add cornbread to the side and enjoy!

There’s a little prep to this recipe but it is so worth it because it is super yummy!

Cumin Shrimp Tacos

Cumin Shrimp Tacos

Ok I am a huge seafood fan and I love a good fish or shrimp taco!!! I used frozen, already peeled shrimp from Walmart but the next time I cook this I think I’ll get the shrimp that I peel myself just because I think the quality is better!

Ok here’s the recipe!:

  • 2 lbs (depending on family size) frozen shrimp
  • Shredded lettuce
  • 1/2 c Lime juice
  • 1/2 c Olive Oil
  • Cumin seasoning
  • Garlic salt seasoning
  • Pepper
  • Chili powder
  • Paprika seasoning
  • Tortillas
  • Sour cream

Ok so start by unthawing your shrimp! Then mix 1/2 c lime juice with 1/2 cup oil. I used olive oil. Pour that over the shrimp in a bowl and season shrimp with cumin, pepper, chili powder, paprika, and garlic salt. I always just eyeball it and season to taste.

Sauté shrimp in a skillet. I ALWAYS use cast iron. For tips on how to cook with cast iron, follow my blog!

Heat up tortillas in the oven for 3-5 minutes on 350 degrees.

Place shrimp in tortilla and top with shredded lettuce and sour cream! It’s that easy! We topped ours with hot sauce and cheese too!

Tip: You can also use bagged cole slaw mix and mix it with lime juice as a topping.

Sloppy Joe Casserole

This is my first recipe post on the blog! Yay! I’m so excited to bring EASY, quick dinner options and other cooking/baking options to you!

This is a super easy and quick casserole that you can whip together and the kids will love it!

Sloppy Joe Casserole:

Ingredients:

  • 1 lb hamburger
  • 2 cans sloppy Joe mix
  • 4 oz velveeta cheese
  • 1 box bow tie noodles
  • 1 cup shredded cheese

Start by browning your hamburger. Then mix in the sloppy Joe mix and bring to boil then simmer for about 5 minutes. Mix in the velveeta cheese and simmer until the cheese is melted. While this is cooking, boil the noodles and preheat the oven to 350. Once the hamburger mix is ready, mix it with the noodles and put in a casserole dish. Sprinkle with shredded cheese and bake at 350 for 10 minutes!

There you have it! A super quick and easy casserole the kids will dig into!
