The cozy, comforting soup you’ll want to make all fall and winter long.
There’s just something about a big pot of homemade soup simmering on the stove that makes a house feel a little more like home.
Especially this time of year.
And y’all, this Creamy Sausage & Spinach Soup is exactly that.
It’s hearty enough to be a meal on its own, and simple enough for a weeknight!
And the best part? It’s made in the crockpot!
Creamy Sausage & Spinach Lasagna Soup
Ingredients
- 2 lbs. Jimmy Dean sausage, cooked
- Fresh spinach, a few generous handfuls
- 2 cups heavy whipping cream
- 1 cup shredded mozzarella cheese
- 2 containers chicken broth (32 oz. each)
- Lasagna noodles, broken into smaller pieces (about 8–10 noodles, or to your liking)
- 1 medium onion, diced
- 2–3 cloves fresh garlic, minced
- Black pepper, to taste
- Garlic powder, to taste
- Onion powder, to taste
- A little olive oil or butter, if needed for sautéing
How I Make It
1. Start with the sausage.
In a large skillet, brown the Jimmy Dean sausage over medium heat, breaking it into smaller pieces as it cooks. Once browned and fully cooked, drain any excess grease if needed.
2. Sauté the onions and garlic.
Add your diced onion to the pot and sauté until soft and translucent, about 4–5 minutes. Then add the minced garlic and cook for another minute until fragrant.
This step makes the kitchen smell absolutely amazing.
3. Add the broth and seasonings.
Pour in both containers of chicken broth into the crockpot and season with black pepper, garlic powder, and onion powder. Add the mozzarella and heavy cream.
Give everything a good stir!
4. Add the lasagna noodles and spinach.
Break the lasagna noodles into smaller, bite-sized pieces and add them directly to the crockpot. Grab a few generous handfuls of spinach and add!
5. Make it creamy.
Keep the heat low and cook for 4-6 hours.
Ladle into bowls, add a little extra mozzarella if you’d like, and enjoy!
Tips from My Kitchen
If you like a thicker, creamier soup, add a little more cheese. If you prefer it brothier, add more broth.
The lasagna noodles will continue to absorb liquid as the soup sits, so don’t be surprised if your leftovers are a little thicker the next day.
What to Serve With It
Honestly, this soup is hearty enough to stand on its own.
But if you’re anything like me, a bowl of soup just feels a little more complete with something warm and crusty on the side.
A loaf of French bread, homemade garlic bread, or warm dinner rolls would be perfect for soaking up every last bit of that creamy broth.
Add a simple green salad if you’re feeling fancy, and you’ve got yourself a cozy little dinner.
That’s what I love about recipes like this!
Nothing elaborate. Just good food and the people you love!
From my kitchen to yours…
Until the tide comes in,
